- 2 tbsp butter
- 2 tbsp olive oil
- 1 medium onion (very thinly sliced)
- 6 garlic cloves (smashed)
- 5 cups canned whoel tomatoes in their juice (from three 14-ounce cans)
- 1 cup water
- 2/3 cup heavy cream
- 3 tbsp honey
- 1/2 tsp crushed red pepper
- 1/4 tsp celery seed
- salt (to taste)
- freshly ground pepper (to taste)
Cook the onion & garlic in the oils until tender
Add the tomatoes, water and spices and heat through
Blend in small batches until smooth
Add cream and stir
Serve with crusty French bread
